We thought your Thursday could use a new @sohlae recipe. This extra green pasta is based on shish barak, little lamb and pine-nut dumplings served in a garlicky yogurt sauce from the Levant. It borrows many of the same ingredients, but recomposes them on the plate. There’s whole-milk yogurt blended up with garlic and dill for the bright sauce. There’s spiced lamb that's seared super hard. And then there’s chewy-sweet dried currants and butter-toasted pine nuts to top it all off. Tomorrow our friends at @epicurious are starting Cooking Through It: a meal plan for our current cooking moment. There's a 10-day grocery list, a recipe for every day, and ALL the possible swaps for each day's recipe. (The first recipe is "Some Sausage and a Sheet Pan” and it rules. ) It's less of a strict meal plan and more of a framework—it's all about doing what you can with what you've got. Through the Lee Initiative, @chefedwardlee has been addressing some of the devastation that has hit his community and inspiring others across the country to do the same. The initiative helps turn restaurants across the country into relief centers with local chefs (like @edouardojordan of @salareseattle , or @nancysilverton of Mozza Restaurant Group ) for any restaurant worker who has been laid off or has had a significant reduction in hours and/or pay. Each night, they pack hundreds of to-go meals that people can come to pick up and take home. On Friday, the BA Foodcast aired a special episode talking with Lee about everything he’s been doing.
